Downtown Miami’s Newest Food Hall Boasts Ecuadorian Fare, Omakase, and More


A new food hall has opened in Downtown Miami. Called The Bloom (stylized The B100m), it is the latest venture from the team behind Mia Market, led by culinary director J.D. Hilburn, former chef of the two-star Michelin restaurant Danube by David Bouley.

The Bloom, designed as a “chef collective,” has partnered with chefs Alejandra Espinoza and Yasu Tanaka to oversee its food options. Espinoza, one of Ecuador’s most buzzed-about chefs, is making her U.S. debut with Cotoa, which offers modern takes on traditional Ecuadorian dishes. Cotoa features casual dishes like “Guaguasas,” Ecuadorian pizza made with cassava sourdough, alongside dishes like fruit-infused ceviches, and cheese-filled pan de yuca for lunch. In the evening, the menu shifts to a gourmet experience with offerings such as wahoo salsero with passion fruit sauce, tortellinis de maqueño filled with chicken stew, and pork belly with cacao. A four-course tasting menu is available for $59.

Tanaka, who has been serving sushi at Mia Market in the Miami Design District since 2020, continues his nigiri-focused approach at Sushi Yasu Tanaka. The menu includes a nigiri omakase, maguro flight, salmon sampler, and a six-piece chef’s selection.

Hilburn himself heads B100M, which serves comfort food favorites like paninis, salads, and the signature rotisserie chicken. The chicken undergoes a three-day preparation process of brining, drying, and cooking, resulting in crispy skin and tender meat. Each chef presides over an open kitchen, providing diners with an interactive experience.

Designed by Miami-based architecture firm Urban Robot Associates, The Bloom features wood elements and art by local artists Papou and Juan Rozas. Mosaic white tile flooring, accented with teal and peach, ascends the walls and center column, which has been transformed into a centerpiece seating area adorned with Rozas’ 360-degree mural.

The Bloom is located at 100 Biscayne Blvd in Downtown Miami and is open daily from 7 a.m. to 10 p.m. Dinner reservations for Cotoa can be made through Resy.com. For more information, visit here.
